Chocolate Chip Peanut Butter Cookies

The best cure for a rough day is a freshly baked batch of Chocolate Chip Peanut Butter Cookies and let me tell you, rough days have been pretty common around here while Chris and I work to juggle our careers, home renovations and maintain a social life. Life is one tough cookie, friends! Nevertheless, we have made it a priority to find an hour within our chaotic schedules that is dedicated to doing something for ourselves each day. Typically, my hour consists of heading to the gym for a spin class, but after a rough day at work you can find me in the kitchen baking some of my favorite sweet treats. The best part about making Chocolate Chip Peanut Butter Cookies is that this recipe both quick and easy, staying well within my one hour window. Not to mention they are delicious! Chocolate Chip Peanut Butter Cookies

INSTRUCTIONS

1.       Preheat the oven to 350F. Prepare a baking sheet by lightly greasing to easily transfer cookies to the oven.  

2.       In a standing mixer combine peanut butter, butter, sugar and brown sugar until creamed and a deep golden color.

3.       Gently beat in the egg, cream and vanilla. 

4.       Sift the flour, baking powder and salt in a large bowl. 

5.       Slowly combine flour mixture with wet ingredients.

6.       Incorporate both Peanut Butter Chips and Semi-Sweet Chocolate Chips in the dough.

7.       Roll dough (approx. 3tbsps) into medium sized balls and place 2.5 inches apart on a lightly greased baking sheet.

8.       Bake on the middle over rack for 8-10 minutes or until lightly golden on the top.

9.       Let the cookies cool on a wire rack for 5 minutes before serving.

INGREDIENTS

  • 1 cup Skippy’s Peanut Butter 

  • ½ cup Butter, Softened 

  • ½ cup Sugar

  • ½ cup Brown Sugar

  • 1 Egg

  • 3 tbsp. Cream

  • 1 tsp Vanilla Extract

  • 1 ½ cups  Flour

  • ¾ tsp Baking Powder

  • ¼ tsp Salt

  • ¾ cup Semi-Sweet Chocolate Chips

  • ¾ cup Peanut Butter Chips
